Revitalizing Retreat Salad: A Delicious Twist on Jennifer Aniston’s Favorite

Jennifer Aniston’s Salad. Step into the kitchen and prepare to embark on a culinary journey with a salad that embodies health, flavor, and simplicity. Inspired by Jennifer Aniston’s famous healthy salad that she reported often ate on-set, this revitalizing salad is perfect for those moments when you crave something nourishing yet delightful, whether you’re lounging solo or hosting a gathering under the summer sun. When I’m on retreat in my mountain house, I will often make a big bowl of this to keep on hand and it’s perfect for both summer, lunch and dinner.

Ingredients:

  • 1 cup tricolor quinoa, uncooked
  • 2 cups water
  • 1 can (15 oz) organic chickpeas, drained and rinsed
  • 1 cup shelled roasted pistachios
  • 1 1/2 cups cucumbers, diced
  • 1/2 cup red onion, finely diced
  • 3/4 cup fresh mint, chopped
  • 3/4 cup fresh parsley, chopped
  • 3/4 cup crumbled feta cheese
  • juice of 2 lemons (about 1/4 cup)
  • 1 teaspoon honey
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste

Instructions:

  1. Cook the Quinoa: Rinse the quinoa thoroughly under cold water. In a medium-sized pot, combine the quinoa and water. Bring to a boil over high heat, then reduce the heat to low. Cover and let it simmer for about 15 minutes, until the quinoa is tender and the water is absorbed. Remove from heat and let it sit covered for 5-10 minutes. Fluff the quinoa with a fork and transfer it to a large mixing bowl.
  2. Prepare the Salad: To the cooked quinoa, add the chickpeas, roasted pistachios, diced cucumbers, finely diced red onion, chopped mint, chopped parsley, and crumbled feta cheese.
  3. Dress it Up: In a small bowl, whisk together the lemon juice, honey, and extra virgin olive oil. Season with salt and pepper to taste.
  4. Combine and Serve: Pour the dressing over the salad ingredients in the large bowl. Gently toss everything together until well combined and evenly coated with the dressing.
